Vitamin E je otkriven još početkom 20. veka. Zbog svoje uloge u reprodukciji raznih životinjskih vrsta dobio je naziv tokoferol, što potiče od grčkih reči tokos, što u prevodu znači – potomstvo, rađanje dece i reči pherin, što znači – nositi. U početku se smatralo, da ovaj vitamin nema nikakvog značaja za čoveka, međutim danas se zna da je njegova uloga za razvoj ploda esencijalna (nezamenljiva).

O ulozi ovog vitamina u organizmu postoje mnoga oprečna mišljenja, ali je ovde navedeno samo ono što je naučno potvrđeno ili ima ozbiljnih osnova za tvrdnje.

Pod terminom vitamina E objedinjuje se grupa hemijskih jedinjenja, od kojih su najrasprostranjeniji α-, β- i γ- tokoferoli, ali najveću biološku aktivnost pokazuje α-tokoferol.

Fizičke i hemijske osobine

Vitamin E je stabilan na zagrevanje na temperaturama od 150 do 175°C. Manje je stabilan u kiseloj i baznoj sredini. α-tokoferol se nalazi u obliku ulja. Može se razgraditi pri nekim obradama namirnica. Na temperaturama ispod 0°C gubi aktivnost. Na njegovu aktivnost nepovoljno utiču još gvožđe, hlor i mineralna ulja.

Biološka uloga

Vitamin E je potreban višim životinjama, kao što su živina i stoka, za njihovu plodnost.

Posle apsorpcije vitamina E u organizmu, najveća količina se nakuplja u hipofizi, mišićima, jetri, masnim tkivima, srcu, testisima, materici, krvi, a kod gravidnih žena u placenti.

Potpuna biološka uloga ovog vitamina nije u potpunosti poznata. Pretpostavlja se, da vitamin E učestvuje u zaštiti lipida ćelijskih membrana od oksidacije. On deluje kao najsnažniji prirodni antioksidant masti, a igra i važnu, ali za sada prilično nerazjašnjenu ulogu u metabolizmu selena. Smatra se da selen igra važnu ulogu u zaštiti od tumora dojke. Vitamin E se dobro pokazao i u zaštiti organizma od negatvnih efekata koji nastaju usled hemoterapije (koja se koristi za lečenje tumora, ali može da ostavi i dosta negativnih posledica po pacijenta).

Antioksidativno dejstvo vitamina E je efikasno pri visokim koncentracijama kiseonika, te se on najčešće koncentriše u onim regionima, gde ima najviše kiseonika (kao što su membrana eritrocita i membrane disajnih puteva).

Obzirom na njihovu antioksidativnu aktivnost, tokoferoli sprečavaju autooksidaciju nezasićenih masnih kiselina kad su izložene dejstvu molekulskog kiseonika.

Na dejstvo vitamina E u većoj meri deluje selen. Selen smanjuje potrebe organizma za E vitaminom.

Osim antioksidativne vitamin E ima i ulogu u stvaranju energije.

U poslednje vreme utvrđena je i njegova uloga u nervnim poremećajima. Pokazano je, da vitamin E igra ključnu ulogu u normalnom nervnom funkcionisanju kod čoveka, ali i kod životinja. Različiti neurološki poremećaji kod čoveka potiču od nedostatka ovog vitamina, a mogu biti izlečeni ili sprečeni blagovremenim dodavanjem vitamina E.

Uočeno je, da je kod različitih životinja nedostatak vitamina E izaziva slabljenje imuniteta, dok je kod životinja sa visokim nivoom ovog vitamina imunitet znatno viši.

Vitamin E igra određenu ulogu i u sprečavanju nastajanja tumora (pre svega tumora pluća).

Postoji više načina na koji vitamin E igra ove poslednje dve uloge. Naime, kao antioksidant vitamin E štiti od slobodnih radikala. To su veoma reaktivni molekuli koji reagujući sa mnogim drugim molekulima u organizmu menjaju njihovu strukturu i time ih čine nesposobnim da vrše svoju funkciju. Pretpostavlja se da slobodni radikali igraju veoma važnu ulogu u nastajanju tumora. Postoje i pretpostavke, da vitamin E blokira molekule prostaglandina, koji smanjuju imuni odgovor. Osim toga vitamin E štiti membrane ćelija od raznih virusa i drugih patogena koji mogu napasti ćeliju.

Vitamin E ima ulogu i u zaštiti organizma od kardiovaskularnih bolesti, snižavanju nivoa holesterola, ali i drugih lipidnih molekula u krvi.

Vitamin E štiti organizam od raznih zagađivača iz vazduha (smog i dim cigareta).

Pretpostavlja se da vitamin E pozitivo utiče na dužinu života, pa se stoga naziva i »vitamin mladosti«.

Prirodni izvori

Naročito su vitaminom E bogate klice semena pšenice, pirinča i pamuka, zatim različita ulja, lisnato povrče i drugo. Iako su ulja iz jetre riba bogata vitaminima A i D, u njima nema mnogo vitamina E.

Poremećaji

Avitaminoza

Pri nedostatku vitamina E kod eksperimentalnih životinja nastaje perutanje kože, mišićna slabost (distrofija), narušavanje funkcije nervnog sistema, neuobičajeni pokreti očiju i smanjen vidokrug. Dolazi do gubitka refleksa, smanjenja mišićne mase, gubitka sposobnosti rađanja, nastajanja fragilnih (poremećenih) eritrocita. U gravidnim ženkama životinja strada plod, a kod mužjaka se smanjuje produkcija polnih žlezda.

Kod čoveka, nedostatak vitamina E izaziva simptome, kao što je degeneracija jetre, dijareja kod koje dolazi do uvećanog gubitka masti i narušavanje membrana. Još nema pouzdanih dokaza da je vitamin E neophodan za fertilitet kod ljudi.

Pri E – avitaminozi se narušavaju mnogi metabolički putevi, a naročito u mišićima. Količina miozina se smanjuje, a kolagena povećava.

Kod životinja se pri E – avitaminozi pojačava oksidacija purinskih baza, usled čega se sa mokraćom izdvaja alantoin u većim količinama.

Deficit vitamina E se može javiti, osim kao posledica neadekvatne ishrane i u slučajevima kada postoji hronični poremećaj u apsorpciji masti, kod hroničnih bolesti jetre i cističnih fibroza.

Hipervitaminoza

Vitamin E može biti toksičan u velikim količinama (preko 600 IJ – internacionalnih jedinica dnevno). Tom prilikom dolazi do krvarenja i do sporog zarastanja rana. Osobe, koje koriste antikoagulacione lekove, se moraju konsultovati sa lekarom po pitanju unošenja ovog vitamina u organizam. Ovo se odnosi i na osobe koje imaju nizak faktor koagulacije, tj. osobe koje imaju vitamin K-avitaminozu.

Višak vitamina E može izazvati i povećan krvni pritisak. Ovo nije uočeno kod svih osoba, pa se pretpostavlja da se povećan pritisak javlja samo kod osoba koje su inače sklone povećanom pritisku (hipertenzivne osobe).

Višak vitamina E može biti jako opasan i za osobe obolele od reumatičnog oboljenja srca.

Do ozbiljnih hormonskih i poremećaja metabolizma lipida može doći ukoliko ima suviše vitamina E u organizmu.

Preporučene dnevne količine

Dnevne potrebe za ovim vitaminom iznose do 400 IJ (internacionalnih jedinica). Međutim mnoge osobe unose i od 600 do 1200 IJ dnevno bez ikakvih posledica.

Bebama do jedne godine se preporučuje unos od 50 IJ dnevno, dok deca između jedne i deset godina treba da unose do 200 IJ vitamina E dnevno.

Kod odraslih osoba se pored vitamina E preporučuje i unos organski vezanog selena (oko 50 do 200 mikrograma dnevno), pošto se time smanjuju potrebe za unosom vitamina E. Kod dece do sedam godina, se preporučuje unos do 100 mikrograma organski vezanog selena dnevno.

Ne preporučuje se unos vitamina E u isto vreme kada se unosi i neorgansko gvožđe, ili kontraceptivna sredstva zato što vitamin E može reagovati sa njima. U slučaju, da se mora unositi i neorgansko gvožđe ili se trudnoća kontroliše kontraceptivnim pilulama preporučuje se unošenje vitamina E nekoliko sati pre ili posle unošenja ovih preparata.

Upotreba u medicini

Postoji pouzdan eksperimentalni dokaz o potrebi, da se vitamin E dodaje u ishrani žena u trudnoći kao i kod novorođene dece (a to se posebno odnosi na prevremeno rođenu decu).

Vitamin E je efikasan i kod starijih osoba koje boluju od cirkulatornih poremećaja, a naročito od intermitentne klaudikacije (bolest perifernih arterija, pri čemu su simptomi ove bolesti bol prilikom hoda, osećanje hladnoće, utrnulost ekstremiteta, zamor itd.).

Vitamin E se dodaje i kod osoba gde postoji povećani rizik od oboljevanja od raznih neuroloških poremećaja. U tom slučaju vitamin E se dadaje u preventivne svrhe.

Ovaj vitamin ima određenu ulogu i u usporavanju, pa i u zaustavljanju napredovanja Parkinsonove bolesti (odlikuje se drhtanjem mišićnog tkiva), koja je dosta česta u svetu.

Kod epileptične dece je uočen nizak nivo vitamina E, pa se stoga pribegava dodavanju vitamina E u njihovoj hrani.

Vitamin E se koristi i u lečenju raznih bolesti dojke. Jedan oblik bolesti dojke (fibrocisticistični poremećaj) se tretira ovim vitaminom u kombinaciji sa drugom terapijom koji se preduzimaju jer ova bolest ima dobre predispozicije da preraste u tumor.

Ovaj vitamin redukuje premenstrualne simptome. Koristi se u lečenju raznih bolesti kože, opekotina, ćelavosti, održava mladalački izgled, sprečava spontani pobačaj, povećava seksualnu potenciju, atletsku građu, omogućava veću izdržljivost, štiti pluća od zagađenosti vazduha delujući sa vitaminom A, sprečava i rastvara ugruške krvi, ublažava umor, pomaže u ublažavanju grčeva u nogama i noćnih grčeva.

U svim ovim slučajevima moguće je uzeti i jako velike doze ovog vitamina i stoga se preporučuje osobama, obolelim od neke od ovih bolesti, da ovaj vitamin nikako ne koriste u svrhu lečenja bez prethodne konsultacije sa lekarom.
